Nutritious Cheesecake for Menstruation

Nourish your mind, body and taste buds with this abundantly delicious and nutritious cheesecake slice in alignment with your menstruation phase. If conception has not occurred at this time the corpus luteum (a temporary gland structure responsible for the secretion of progesterone and small amounts of estrogen) is absorbed. This prompts a reduction in progesterone and estrogen release which triggers menstruation (our bleed). 

Our hormones reach their lowest levels at menstruation while we’re also losing essential micronutrients iron and zinc throughout our bleed. At this time it’s particularly important to focus on nutrient rich and blood sugar friendly food combinations as well as nourishing lifestyle practices such as restorative yoga, stretching, meditation, walks in nature and rest. We continue to experience a heightened metabolism making it important to continue to incorporate quality protein and nourishing fat with every meal to support balanced blood sugar and appetite satisfaction, and to also focus on foods rich in iron, vitamin c and zinc to support energy, mood, cognition and balanced nutritional levels. 

Matcha and Lime Cheesecake

Time: 15 mins prep, 1 hr set

Quantity: 10 serve

Phase: Menstruation

Ingredients

Base:

  • 2 tbsp flaxseed (ground)

  • 1 tbsp desiccated coconut

  • 1/3 cup cashews

  • 1 tbsp coconut oil

  • 1 tsp almond butter

  • 4 dates

  • Ceylon cinnamon

Filling

  • 5 tbsp cottage cheese

  • 1/2 avocado

  • 1 lime (zest and juice)

  • 1/2 lemon (juice)

  • 1 tsp maca

  • 1 tsp coconut oil

  • 1/2 tsp matcha

  • 8 dates chopped

Method

  1. Blitz flaxseed in a blender until ground, then add nuts and lightly blitz, then transfer to a bowl.

  2. Add desiccated coconut and melted coconut oil to nut mixture and stir to combine, then add almond butter and blend thoroughly to combine. If any ingredients appear dry add a slight dash of water and stir through. Mixture should be ‘just wet’ not ‘liquidy’.

  3. Line baking dish, transfer base mixture to lined dish and press down firmly then set in freezer for a few minutes.

  4. Add all topping ingredients to a bowl and mix until smooth, spread evenly on top of base mixture, sprinkle with remaining lime zest and set in the freezer for 1 hr.

  5. Remove from freezer and slice into preferred size, store in fridge for 3-4 days or in freezer for up to 2 weeks and remove 20 mins before eating to thaw.

Maca - rich in iron and b vitamins, maca is also traditionally known an ayurvedic adaptogen used to support energy, mood, libido and the general female reproductive system

Ceylon cinnamon - a powerhouse spice which may help to support balanced blood sugar
