Asian inspired salmon salad

Sesame and soy marinated salmon with sweet potato and kale

Are you in the mood for a Japanese inspired salad with salmon and delicious sweet potato? Then we highly recommend this sesame and soy marinated salad with a mix of sweet potato, kale and spinach to give you that extra nutrient dense dish. Ingredients

  • 4 salmon fillets

  • 2 large sweet potatoes

  • 1 package (70 g) of spinach

  • 100 g kale

  • 0,5 dl olive oil

Dressing:

  • 0,5 dl tamari/Japanese soy

  • 1 tablespoon red curry paste

  • 2 teaspoons sesame oil

  • 0,5 lime

  • 1 teaspoon of honey

  • 2 cloves of garlic

  • Black or white sesame seeds (optional)

  • Salt

Instructions

  1. Put the oven to 200 degrees

  2. Peel the potatoes and slice them into small cubes

  3. Place the potatoes on a baking sheet, and drizzle with olive oil and salt. Leave for 25 minutes

  4. Mix all the ingredients for the dressing

  5. Prepare kale and spinach by drizzling a generous amount of olive oil and massage for a minute

  6. After 25 minutes, take out the baking sheet with potatoes and add the salmon. Drizzle dressing and sesame seeds. Place in the oven for another 12-15 minutes

  7. Serve salmon, sweet potato, and the vegetables, and add some flake salt over the dish.
